Hello can the sender intercept the package after it being sent ?
can he make Royal Mail return the package to him before its delivery ?

As far as I know there is no way to tell just by the tracking number, however most Special Deliveries that are not saturday guaranteed are actually attempted on a Saturday, unless there is a Saturday retention in place for the address.

the sender of the package don't reply
but the address I'm expecting the package to is a "business" it's a company in fact and I'm sure that Royal mail knew that the company is closed on saturday/sunday so I guess they will do it on monday

they pay quite a bit more for a saturday dely and the recipient will know this as it will have a little yellow sticker on it with the letters SD on it. In my experiance (i collect from a branch office) they ask if it is a business and will it be open, if not they dont sell them the Saturday special, possibly to do with selling the customer the wrong product. I haven't asked why but will do.

Spot on with your reasoning.
