Hi there.
I have printed digital stamp using PayPal and sent parcel day after stamp has expired.
I totally forgot that needs to be send same or next day.
It hasn't been delivered yet (first class, recorded, signed and sent on 25th Thursday (should be send Wednesday the latest) of this month.
Could you explain me what is happening in such a case?
Will it be delivered or returned?
When will it be delivered or returned?

Hopefully, it will have a nice big yellow sticker put on it for the full price of postage plus a £1 handling fee.
If you don't post it in time that's your fault and we charge for it, you have I think it is 3 days from purchase of online postage to post it. If you don't think you're going to post it in time get it refunded, buy new and in date postage and then send it.
It'll take longer to get there because it'll be surcharged, when it gets to the right region the person it is going to will get a nice card delivered saying they need to pay £x.yz before it is given to them. Once they've not paid for a few weeks if there is a return address it'll be sent back to your area, where you will need to pay the fee in order to get it returned to you. If there isn't a return address on it then consider it gone.
Of course you may have gotten lucky and it may make it through. Heed the lesson for next time though!

Probably recipient will be extra charged.

One more question.
How can I check if it is delivered/signed if I don't have any tracking number?
Parcel was collected from my company along with all other company parcels.
All I have got is the copy of the label.
£2.10 will be the charge if it's surcharged.
There's probably no way of tracking it without the 13 digit ( 2 letters, 9 numbers, GB ) code use for Recorded, Special Delivery etc.

No, Large Letter, 200g (101-250g), Second Class = £1.10 + £1 surcharge = £2.10 To Pay.
Recorded Signed For would be 95p extra and would have been handed in at a Post Office where it having expired would most likely have been noticed, although if taking it to a Post Office there wouldn't be much point in printing off a smart stamp first.

Sorry, yes, I missed that. Being accepted into the system as Recorded Signed For it's probably less likely to be surcharged than if it had been just put in a post box, but if it was it would presumably be Large Letter, 200g (101-250g), Second Class = £1.10 + 95p Recorded + £1 surcharge = £3.05 To Pay.
On topic but off subject, what is the RM rationale for having a use by date on virtual stamps? If someone buys a first class stamp from a post office they can use it at any time (presumably even if the price has risen in the meantime as many don't show this?!) so why not the same for postage bought online? Certainly with SD it has to be used by the end of the next working day, which is a little inconvenient at times for me and also for RM as if for some reason it's not posted in time I have to bother them for a refund!

I print mine directly onto envelopes so it would be pretty clear if they were re-used - and only possible to the same address. Much easier to steam off a stamp and re-stick to another envelope surely! Also online postage has a QR style barcode so doesn't this stop it being re-used?

But stamps are postmarked, in theory if not in practice anymore, to prevent them being 'steamed off' and reused.
Yours are printed directly onto envelopes but surely some, especially for packets and parcels, are just printed on stickers.
And, yes, the QR style barcode on online postage should stop it being re-used but as well as that, in theory again, preventing photocopies being used the 'use by date' is surely an additional measure to attempt to prevent fraudulent re-use.
