Look how everything they could do wrong, they did get wrong:
I started work before their security clearance came through on the next day.
They confirmed me verbally again after I'd already been working three days.
They then sent me a separate email confirmation for a still later date after I'd been working for over a week.
They didn't pay me by normal payroll but instead a voucher as if they didn't even know what was going on.
They then paid me some more money with an incomprehensible unitemised payslip.
They then paid me 1 penny on the next meaningless payslip.
They then send me a more itemised payroll statement, which doesn't have all my days on, doesn't include most of my overtime and they figure I owe them money.
I can afford to smile about this because I had the foresight to take mobile phone pictures of the timesheets. My name wasn't printed on them for 7 working days and I had to write it in.
They were 18,000 casuals apparently ... if they all should have been paid an average of £1000 then even if they only delay payment by a couple of months without simply cheating people out of their money, then the interest on that money they're earning is enough to buy a house. Who's creaming the money off?

Make and keep a copy of your written request and send it recorded delivery.
It's a reasonable request under the circumstances.
Chances are you will never hear from them again but even if you do at least you'll have the facts in front of you and the satisfaction of knowing you've cost them some extra admin.

You have to put the ball back in their court by asking for hard evidence to back up their claims of money owed.
If you just blank them all they will do is pass the debt over to a debt recovery agency and they will not have any interest in what you earned or didn't earn or how unfairly you were treated just the debt that is on the sheet in front of them.
You have to resolve the situation before a DRA becomes involved otherwise it's a world of pain getting that monkey off your back.
