Today was the last day for the remainder of the sun newspapers, when we were bagged up and ready to go it was approximately the same time as yesterday, so with a union rep we then went to the DOM with our concerns that we may not finish on time due to the same reasons as yesterday.
They then proceeded to shout at us again mentioning 'You only have 1 lot of D2D's and because we had 1 extra tray of mailsort thrown out, we had plenty of time'
My argument was that we have newspapers that are awkward enough to deliver on their own, which we will have to deliver to 50% of our entire delivery points (Just 2 days to deliver them all) and the fact we have to use a trolley and that having an extra tray thrown out is negligable due to having to wait till the IPS was thrown out before we could bag up anyway!
This resulted in yet more shouting and threats of wilfull delay, and our rep just standing there saying nothing. After asking and confirming the protocol for what to do if we are overrunning we then left the office to commence the delivery, the manager then followed us continuing to argue with us and threaten wilful delay again if we didn't complete.

This manager sounds a complete A**Hole. I had similar problems last year with one of our managers. I was dragged into the office 4 times in 6 months to go through "fact finding interviews that all where engineered to intimidate me. Each time they tried to get me on something I had an answer because I follow procedure strictly. He did eventually charge me with and issue a conduct reprimand for one thing, which I appealed and won because I followed procedure and was being singled out for separate treatment.
You did the right thing to complete in this situation, but what you need to do now is, as others have said keep meticulous records of what he says to you and his attitude to you, with dates. Contact Atos and the B&H helplines if you feel stressed or bullied and put in a grievance at least. If he has been verbally abusive, using swearing for eg it may be worth trying to put in a B&H case against him. (However RM always attempt to downgrade any B&H case to a grievance so you have to have good evidence for bullying.(possibly a recording of him swearing or shouting at you) do not get into a shouting match, you have to take the higher ground.

All mail coming into the office is classed as live mail as far as I know, and it is up to the Dom/lino to say if it all goes out or not. All you have to do is inform them that you do not think you can complete within your duty time if thats the case once its all in the frame. (allowing for your meal break) .They should then either ask you what you think you can deliver, or tell you to bring back what you cant. As long as you make it clear that if take out more than you think you can deliver, that you will be bringing any remainder back. Do not even tie up until you have a clear instruction on what they want you to do. (dont forget to allow time for tying up etc in your calculations.) If they want you to phone in make sure that you know how to contact them with the PDA - do not use your own phone. Be consistent, always use the trolley, do not walk and sort, never finish early, prioritize specials so they always get delivered before time, and dont cut corners generally and they will find it very hard to fault you. They may still get angry when you work this way, but they will be powerless to do anything other than get frustrated, because you are doing the job correctly. If they tell you to do something a certain way and that will take longer then thats their decision, as long as you let them know it will take longer, just get on with it. Stay calm and just explain why it would take longer, they will soon realise that they cannot micro manage you and may hopefully leave you alone.
