My advice is to submit a "subject access request" its a major no no legally if information about you isn't made available to you,

Hr has its own data department if you go onto my royal mail its either in there or contact hr and ask them yourself.
It may be that raising awareness with them may help things along

Don't you receive an Annual Leave Card showing your total holiday entitlement for the year and what you have used and what is still outstanding?
