Is it possible for me to find out about any records stored by Royal Mail about my employment.

Yes.

Send a letter requesting all documentation / emails and everything else that names you or that are about you to HR in Sheffield and enclose a Cheque for £10 to cover printing costs etc ( this will probably be returned to you )
