I have signed for three S/A duties Tuesday Thursday and Friday afternoon s
When one falls on my day off do I have to work on Monday or Wednesday to make up for the one I’ve lost ?

In my office when it’s your day off you swap it with someone or have to come in.
Not sure how it works really, I wouldn’t sign for one personally

Your SA Duty is a contract that you have agreed to cover and if unable to cover it is your responsibilty to arrange for a substitute and advise manager or complete yourself.
If your SA duty falls in your annual leave then the responsibility to arrange a substitute is removed but will be included in your holiday pay.

Our manager and union rep have agreed to put an hours parcel delivery on front end of sa, compulsory overtime!!
