Do posties get bank holiday paid off? Or is it like other jobs where you’d probably have Sunday hours and come in to do other bits and bobs?

Yes if it normally was your day to work you still get paid. With the amount of leave Royal Mail give at a significant proportion of Bank Holidays actually come under our statutory leave entitlement so they have to pay you.

If it was a normal day off then no you won't get paid, but you will get a day off in lieu.

For part-time <4 days workers then there will be occasions where you neither get paid or get a lieu day, but that's because the BH entitlement reduces in proportion to how many days they work.
