If so: Why does it matter, if they swap walks with each other. So long as they don't change the content, or route, of the walks?
If on the other hand, they're doing unpaid overtime, using their cars, carrying too much weight, etc.. Then I can understand you being p****d off with them.
Or am I missing something?

Slightly - if you know an area you deliver faster because your more confident of your knowledge of the area. If however, you are new to it, you double check the road names, the house numbers and names. Sometimes on hard to find addresses it can take ages to find it (ie 1A or even 1fa5

) or if a house has a name but no number displayed you question yourself if you should put the post through. All these little things slow you down so a new walk takes longer to do.
Also when you know a delivery you know which alleyways and official short cuts you can use, where the toilets are etc.
I have sympathy with both the Posties "GonePostal" is

and he himself.
1. The posties want an easy life and feel more comfortable delivering in an area they know.
2. If they did the duties as laid down by management they would not get as much done as they would on their old duty. therefore there would be more opportunity to recoup money from OT and it would also demonstrate to management that chnages through agreement is better and more productive than changes through diktat.
However, most of these things would not be apparent to non delivery posties, this is one of the cases where to gain an insight you really have to walk the walk for a decent amount of time. Hence why we get frustrated by people who haven't thinking each and every duty is exactly the same.
