You don't need "proof" they need to act reasonably, in a tribunal except for constructive dismissal they need to prove they acted reasonably.

The Union also don't need proof, they'll take your word for it in most cases.

However, a diary of the overtime you worked and the pay you have received will definitely help. The diary doesn't need to be handwritten or physical, it can be electronic. Although it has been tested in a tribunal the PDA tracking information on you would be a good resource for either side. For the Union, if RM refuses a reasonable request, for RM if an employee is chancing his arm.
