If resigning, will any remaining holiday be paid in the final payslip?

Yes in most cases, or shortly afterwards, but remember leave is not awarded immediately - it is accrued throughout the year.

So for 2019/2020, you have probably taken most of it already.
For 2020/2021 as it hasn't started yet you would have accrued very little at all, depending on your actual leave date.
