A reserve with the same day off every week for child care
How protected is it
By that I mean, can they change it whenever

If you have an official family-friendly arrangement on paper then they can't change it without reasonable notice, without your agreement (constructive dismissal) and without a reasonable justification. If they break any of the above, and you fully understand constructive dismissal rules then you could possibly go a tribunal after exhausting all the internal procedures.

If it's unofficial then there is no protection.

Was asking if a manager can change it as it’s not official but have had the same day off for a year now due to childcare and figured that could be what they go for if they don’t like how I work(working to time/using trolley etc)

You MAY be able to go down the Custom and Practice route, but you'd need a rep to aid you.

Its a fallback position when there isn't a specific agreement covering a situation. Basically, if something becomes custom and practice it could potentially be found unfair at a tribunal. Its usually a last shot rather than a long shot.
