How many days Holiday can you carry over?

I've been told it only 5 days each year, some older posties in my office say they are owed 6 weeks

It is normally 5 days but there is as usual exceptions for instance it may be A/L not taken in the financial year due to a long term absence.

And why can they not its their leave. personally always carry plenty of single days over. take my single days when it suits me not royal mail

You can carry over up to five days, more BY AGREEMENT. There was a nice form letter floating about somewhere online to be used when your accrued holidays weren't being given to you due to managers not wanting/being able to pay back the debt they'd accrued.

in this case I dont think as PT postie that I do longs and shorts, I know some FT posties finish time is 2.15 on a Wednesday rather than 2

Duty end times are made variable on a fixed basis to 'match hours to workload'.
Standard rule is five days/one week of leave can be carried over. Remember in most offices AL is now calculated in hours rather than days. Exceptions to the five day rule can be made or negotiated based on office conditions and set-up.

I have 6 left plus an extra day because my rest day fell on Boxing day, that totals 7. How can I stop the bullying DOM from taking away my 2 days?

Riddle me this.

Someone comes back from long term sick leave and didn't use their 2 weeks when they were absent (obviously).
Someone else has 2 weeks to take who hasn't been off sick.

Who gets it?

No one should be treated differently in this case surely? (i.e. you were off/you weren't off).

He cannot take your 2 days away they our your's.
