Does your existing leave you couldn't take while off sick get carried over to the following year .I had 3 weeks booked but didn't take them as I have been off sick. What happens to those weeks ?

You will be credited for them.

As far as I understand it, only a max of 5 days can be carried over to following yr.

Under normal circumstances - yes but not when there are mitigating circumstances.
You don't lose your leave.

No. All outstanding leave can be carried over with the agreement of Royal Mail. The 5 days you remember correctly is carried over automatically.

When on sick leave you still accrue Annual Leave and must be given the chance to take it, for details see the link provided by Mobey.
