Would not trust any managers but as to your first enquiry if you got paid for both of the days that would be two sick absences but if it is a part day sick it could be otherwise.

About the back pay, what is your managers reason as to why you haven't had it? Need to know that first

I would be more concerned about the money they owe. If you have evidence of underpayments and can present your case at a small claims court, I would write a nice letter to the DOM with a copy to the DSM and Moya Greene giving them 14 days to make right your pay, failing this you will take this matter to the SCC.
