Does anyone know where I can find that there has to be 2 people to lock up as a safety issue thanks

Nowhere if it's not unsafe.
I lock up myself but it just might be different for a bigger office.

But there should be a risk assessment somewhere that was drawn up when they either introduced risk assessments or Singleton "lock-up".

I've never seen a risk assessment during all my years with Royal Mail.

Not knowing the size of office that you are locking up or the time and the shifts that are being operated from your office but this could become a H&S issue.
What would happen if you suddenly took ill and was unable to contact someone you would be left unattended until your family grew worried as to your where you were and you would have to wait until the next shift appeared for work.
This is not SSOW ( Safe Systems of Working ) and needs to be addressed by your local H&S representative.
