We have just changed completely the way holidays are determined in our office, in the past we were giving blocks and basically we sorted it amongst ourselves but now ( new dom ) we have had to put what we would like down and he determined who had what ... After getting my holidays I found he has split weeks up for example one of the weeks I'm off all week but in the Saturday then two months later I'm in all week but off the Saturday from the previous weeks holiday I had off.....can he do this ?

In the way forward agreement, the first paragraph under the Annual Leave section clearly states that any "local agreement with regards to leave can not go against the provisions set out in this agreement". It reiterates this again under the "selection for leave" section.
I'd get a copy printed off and then go from there.
