Depending on your reason for sick absence and the type of manager you have,the second option may run into complications later.....

If you're off sick I would guess that you're sick whether it's your holiday or not. When I worked for Ladbrokes, a company that will screw it's staff even more than RM appear to, always gave you the days back if you were sick during your holiday and could provide a doctors note. Not sure on RM policy though but there are some very knowledgeable posters here, someone will know.
I staged a Roger Moore impersonator festival in my local village. There were a lot of eyebrows raised, I can tell you.

You are legally entitled to any leave back that is covered by a certificate (self or doctors).

i have had first hand experience of fishtanks 2nd option.......
went away after telling dom it was prebooked, i had the booking and all proof.
upon my return i was informed it had been booked as AL.
argued the toss for a couple of weeks but then decided it wasnt worth it.
went to docs and explained the situation, he signed me off for another 3 weeks
like FT says it depends on your manager so dont get your hopes up.

Heard this happeneing a few times over the years and it really depends on the type of sickness. 
If for example you have a broken foot in a cast then you could still get away on hols with crutches and claim that its rest and helping the recovery, best check with a doc though.
Some managers can be arsey though

just be careful, the manager may argue, that if you are sick you cannot go on holiday, or say something that gives the impression that the holiday will speed up your recovery.
