If the union rep came with you to sort out the hours before they should have some proof. If not call that person as a witness.
Unless they changed your contracted hours per week, not times you start, you would not have had any paperwork through although Captain Hindsight would tell you it might have been prudent to ask for paperwork at the time.
Finally, if you are in great stress and not under threat from a Stage 3 it might be wise to take a break and go to see your Doctor.
HELP is also an avenue you can take, it's a helpline that are experts on Royal Mail issues and no doubt they will give you some great advise - 0800 688 8777 - It's for Royal Mail Employees.
