Why don't you just copy and paste it into a word processor (works etc.) That's what I did

JPG's are of a reasonable compressed quality from scans , at least someone went to the trouble of scanning the documents . There's the free Adobe Reader to view PDF's which you can have as a plug in for your browser .. The other problem is not everyone has got MS Word and apparently there's compatibility problems with MS Works and the expensive MS Office Suite . There is the open source free, OpenOffice which is nearly as good as MS Office . My apologies if I've got anything wrong as I prefer not to use the MS platform if I can help it .

here is a download link from the OpenOffice Platform - it is very good indeed as it works with most formats including Office and Works.
