Joseph Bowers' unleashed dog Bruno savagely attacked 62 year-old John Grainger – ripping a chunk out of his face and bottom lip – as he stooped to unlock his bike in Chelmsford town centre on August 11.
The owner, a 49 year-old from Chelmsford, then casually walked away from the scene without stopping to check on the heavily bleeding victim.
Bowers pleaded guilty at Chelmsford Crown Court on Monday to being the owner of an out-of-control dog in a public place, after the judge told him he would escape jail if he did so. He will be sentenced in December.
Mr Grainger, who was just weeks away from retiring after more than 38 years as a postman in Chelmsford, had to undergo reconstructive surgery at Broomfield Hospital, where surgeons rebuild part of his face by using skin from behind his left ear.
He said: "It was about 4.25pm and I had gone to the civic centre to get a bus pass.
"I went back to my bike and bent down to undo the lock when the dog attacked.
"I didn't realise what had happened – I didn't even realise it was a dog.
"All I knew was that I was covered in blood."
The attack on Duke Street was seen by the council's CCTV operators who then alerted the police.
Mr Grainger, of Sandford Mill Road, Chelmer Village, underwent two operations, one to rebuild the area underneath his lip, which was completely missing, and one to save his lip.
He told the Chronicle that dogs with a tendency to be violent should be kept on a leash in public and be forced to wear a muzzle.
Mr Grainger also said that he did not bear Bowers any ill will.
"I wouldn't want him to go to prison.
"I don't think it would do him a lot of good. I don't hold a grudge – it happened and I now have to move on with my life."
His wounds have healed well and he is not in pain anymore but he still has noticeable scarring from his ordeal.
Judge Anthony Goldstaub said: "If people are not responsible with dogs they can be very dangerous indeed."
The judge said he was a "dog lover" but would not hesitate to destroy the Staffordshire Bull Terrier, Bruno, if it was proved that he had a further violent history.
He told Bowers that he would spare him jail if he pleaded guilty. He will be sentenced in December.

Such charity, I would be less forgiving, I would demand compo, put dog down and ban him from owning a dog, he should also be sent down for such an appalling lack of concern for the welfare of others, he would have got away with it without the CCTV, I HATE scums

Nice to be fluffy and forgiving.
I prefer to consider the assoles next victim as well as the present one . Any one who knows dogs (which should in theory be all of us) knows that they have their own charachters and bad ones should be destroyed out of the gene pool.
As for "Matthew 5:39" wouldnt this refer to a less than murderous assault wherein a perp may be forgiven for a first offence, but wait for a second before judgement, because the first maybe out of charachter, because humans have freewill and the potential for reflection and change. unlike the purely animal instinct of dogs.
IMO a murderous assualt such as this should be met with a martial defence.
The victim and judiciary have no moral right to forgive a potentially repetitive crime.
Same for drunk drivers, rapists etc, its not just this victim but the potential "next". And its pi$$e$ me off.
