Hello say if im ill Mon-fri and my days off are saturday and sunday and i got back to work on the monday should the saturday and sunday be classed as sick days?

unless you ring in on the friday and state that you are now fit for work then yes, sat and sunday will be included as sick days

Saturday and Sunday in this scenario should only be classed as sick days, (implied), upon failure to attend on Monday.
The reason you should have informed a Manager on Friday, or at the very worst Saturday, is in order for them to resource effectively.
