Do I ring the 0345 6060603 number to make one?

Unless things have changed you make a Stage 1 grievance application on an informal in-house basis to begin with.
That is in the first 14 days you try and work things out with a manager in your office. As in shake hands and move on

In reality that is garbage as it never works out like that as managers will simply ignore you in the majority of cases hoping you just give up and forget about it.

If no response is given or you disagree with the manager outcome then you call HR and elevate to a stage 2.

Without doing it this way HR will simply knock it back

Be warned though, after that first mediation with the manager and you still disagree and take it forward with HR, you open yourself up to a vexatious allegation, especially if it is against a manager. There is a difference between bullying/harassment and performance management techniques

It is best people read from the actual grievance procedure first before speculating

How's this work with the new COM's then? Previously wasn't the 2nd line manager the DOM but do we have DOM's any more?
Do we have a 'senior' COM or is the next line manager up from your immediate manager some mysterious desk bound jockey
who you only ever hear of being on the end of the mysterious 'conference calls' that tell us we're all doing a crap job?
