This is my third year in the job and I am leaving at the end of this month. I understand that I am required to give one week's notice. Can I give more notice than that? Surely that would be of benefit to all concerned.

You can if you want, the 1 week (or 4 in some new contracts) is the minimum, not a specific requirement.
