If one is on a temp contract and decided to just see out that period without signing a new contract, could he/she just not come in after the finish date but still expect any holiday pay due?

If you are on a fixed term temporary contract then your contract will show a date when the life of the contract is terminated and that would be your finishing date with the business unless renewed by the business. Your holiday entitlement would be dependant on what holidays you have accrued and what you have already taken up to that finishing date. Holiday payments still outstanding would be included in your last wage slip. Mandatory holidays over the year would amount to 28 days which is 2,2 days per month.

I would be careful mine ran out and never got another through the door. So I chased it up with the union rep and management and they came back to me that it just keeps renewing.

Don't worry about it. I and several others in my office haven't had a contract for months, we simply turn up each week, do our round allocated and get paid the same with the same hours. They never seem to tell you if you're okay and being continually employed, but they'd soon tell you if they were going to terminate it because they have a set procedure to follow.
