As a member of the Green Titoist movement Clash,i would be disappointed if you didn't minimise the ecological damage of farming the animal by eating the whole thing...arse and all.

Saying that, it's bloody expensive compared to others. It's got something to do with employing lots of shepherds to protect them from the locals. Apparently they don't want the taste of the meat compromised
