If you leave the business and then decide to return within a month is that ok and what happens to seniority and holiday entitlements?

Holiday entitlement is based on all service within Royal Mail so that remains unchanged.
Length of service (seniority) must be unbroken* therefore that resets to zero.
There are some rare and exceptional personal compassionate circumstances where this rule can be waived for example if the member resigned to care for a terminally ill partner. These would be looked at on a case by case basis.

As for the question 'Is that ok'.
I suspect you would have to follow the recruitment process like everyone else, whether they thought your experience was more important than the fact that you've recently felt the need to resign would be up to recruitment to decide.
